Job Description

PURE DESI PTY LTD is seeking a skilled and reliable Cook to prepare and present authentic Desi cuisine while maintaining the company’s established standards for flavour, quality and presentation.

The successful candidate will be responsible for daily food preparation, cooking and kitchen operations. The role requires consistency in every dish, careful handling of ingredients and compliance with food safety and hygiene requirements.

The Cook will work closely with supervisors and other kitchen staff to complete daily production requirements, manage busy service periods and provide customers with high-quality traditional food.

Key Duties and Responsibilities
  • Check the freshness, quality and condition of ingredients before preparation.
  • Prepare and cook authentic Desi dishes according to approved recipes and menu requirements.
  • Season, taste and adjust dishes to maintain consistent traditional flavours.
  • Monitor cooking times and regulate equipment temperatures to achieve the required results.
  • Prepare ingredients by washing, cutting, marinating, measuring and portioning them correctly.
  • Present meals professionally using appropriate sauces, gravies and garnishes.
  • Prepare suitable meals for customers with special dietary requirements when requested.
  • Store ingredients and prepared food safely under appropriate temperature-controlled conditions.
  • Monitor kitchen supplies, record stock shortages and assist with ingredient ordering.
  • Maintain clean and hygienic workstations, utensils, appliances and food-preparation areas.
  • Support menu planning, recipe development and estimation of required food quantities.
  • Coordinate with team members to complete daily production and service targets.
  • Guide junior kitchen staff and apprentices in cooking methods and workplace procedures.
  • Follow HACCP principles, food safety regulations and workplace health and safety procedures.
Skills and Qualifications
  • Certificate IV in Kitchen Management, Commercial Cookery, or an equivalent international culinary qualification.
  • Minimum 1 year of relevant experience in a commercial kitchen or hospitality venue.
  • Strong knowledge of authentic Desi ingredients, flavours, recipes, and cooking techniques.
  • Sound understanding of Australian food safety regulations and HACCP principles.
  • Ability to work effectively in a fast-paced, high-volume kitchen environment.
  • Strong teamwork, communication, time-management, and organisational skills.
