Job Description

Smokin Joe is a well-regarded dining destination located in Albury, NSW. Known for bold flavours, quality produce and a welcoming atmosphere, we pride ourselves on delivering an exceptional experience to every guest. We are a growing establishment committed to culinary excellence and are now seeking an experienced Chef to join our kitchen team.

Key Duties and Responsibilities

Plan, prepare and cook a wide range of dishes to a consistently high standard
Design and develop seasonal menus in collaboration with management
Supervise, coordinate and direct kitchen staff during service periods
Ensure strict compliance with food safety, hygiene and HACCP standards
Manage food ordering, inventory control and stock rotation to minimise wastage
Monitor and maintain portion control, quality and presentation standards
Train, mentor and support junior kitchen staff and apprentices
Maintain kitchen equipment and promptly report any maintenance requirements
Adapt menu items to accommodate dietary requirements and allergies
Contribute to cost management and assist with kitchen administration as required

Essential skills and Qualification

AQF Certificate III in Commercial Cookery or equivalent overseas qualification
Minimum 3 years post-qualification experience working as a Chef
Demonstrated knowledge of food safety principles and HACCP compliance
Proven ability to lead and supervise a busy kitchen team
Experience in menu planning, development and food costing
Excellent time management and organisational skills
Ability to perform consistently and calmly in a high-pressure environment
Flexibility to work evenings, weekends and public holidays as rostered
Valid Food Handler's Certificate (or willingness to obtain prior to commencement)

Desirable and Attributes

Experience in a similar hospitality environment (grill, smokehouse or casual dining)
Knowledge of Australian food safety legislation
Strong communication and interpersonal skills
